Can you believe we are already in the month of November?! It is pure insanity how fast this year has gone. But never fear, we are still in the throes of pumpkin everything season around here for another month!
I recently shared a recipe for my Pumpkin Baked Oatmeal on Instagram which is a major favorite in our house! And if my picky kids love it then the recipe must really be a winner, am I right? It comes together so easily and is perfect to meal prep and then reheat throughout the week.
As mentioned in last month’s Guiding Stars post, they label products in the store with 1, 2 or 3 stars that signify good, better or best nutrition. Well this oatmeal includes three 3-star ingredients! Milk, pumpkin and old fashioned oats are all 3-star, nutrient-packed ingredients that you can feel good about getting in your family’s tummies!
For a little added sweetness, I do use 100% maple syrup which does not meet the nutritional criteria to earn any stars but that’s where we keep in mind that all things are ok in moderation. And maple syrup is a better option compared to chemical laden pancake syrup blends.
What you’ll need:
- 2 cups old fashioned oats
- 1 cup milk
- 1/2 can of pumpkin puree
- 1 tsp baking powder
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 1tsp pumpkin pie spice
- 1 tsp cinnamon
Instructions:
- Preheat your oven to 350 degrees.
- Whisk 1 egg in a medium size bowl
- Add in milk, pumpkin puree, vanilla and maple syrup and whisk until combined
- Add in remaining ingredients and mix until fully incorporated
- Spray a baking dish with cooking spray
- Transfer mixture to the prepared baking dish and give it a shake to even it all out
- Baked for 30 minutes
*Pro tip: I prefer to warm mine up and top with a bit of maple syrup.
